Champagne Philipponnat
Les Cintres 2012
The Champagne Les Cintres 2012 by Philipponnat is one of the Maison's three rare single-plot cuvées, the most intense expression of the central plots of one of the most precious vineyards in all of Champagne. It is born in the finest sector of the celebrated Clos des Goisses (lieu-dit), where the oldest, sun-drenched vines, with stocks reaching seventy years of age, occupy the steepest slopes most exposed to the sun and convey with rare intensity the greatness and depth of Pinot Noir on soils of pure chalk.
This edition, Vintage 2012, comes from a year marked by winter and spring frosts and by cold weather just after flowering that, together with the coulure, reduced yields while enhancing concentration, before closing under ideal conditions to deliver a Pinot Noir of exceptional quality, with a high sugar content in balance with a satisfying acidity. Using the first press alone, it follows a traditional vinification and fermentation carried out entirely in wood and without malolactic, so as to avoid any premature oxidation and to preserve its purity and character. After the tirage comes an ageing on the lees of at least nine years, while the final dosage of 4.5 g/l, in Extra Brut style, safeguards the balance between freshness and vinosity.
On tasting, Les Cintres 2012 shows a pale gold colour and a refined effervescence with lingering tears, while on the nose it stands out for its elegance and fruity notes of cherry and raspberry eau-de-vie that fade towards an indulgent touch of honey. On the palate it proves very elegant and intense, with the first aromas of raspberry evolving into nuances of blueberry and black cherry, before closing on a long finish that retains an extraordinary freshness. Production in a limited run of 2,176 bottles.
