Champagne Perseval-Farge
Les Goulats
The Champagne Les Goulats by Perseval-Farge originates from the eponymous parcel located in the Premier Cru village of Chamery, in the Montagne de Reims, and stands out as a rare and original single-parcel cuvée. The blend combines 78% Cépages Oubliés – Arbanne, Fromenteau, and Petit Meslier – with 22% Chardonnay, offering an unconventional expression capable of interpreting the terroir with strong personality and depth.
This edition is the result of the 2014 (64%) and 2013 harvests, with vinification and fermentation carried out in wood and only partial malolactic fermentation, a choice that preserves tension and complexity. After bottling, the wine undergoes at least 8 years of ageing on the lees, essential for building structure and articulation. The final dosage of 4 g/l, in Brut style, supports balance without compromising precision.
On the palate, Les Goulats stands out for its intense and distinctive profile. The nose reveals notes of yellow fruit, candied orange peel, apple, and mandarin, accompanied by light oxidative nuances and a clear mineral imprint. It is vibrant and dynamic, supported by marked freshness and a well-defined structure, leading to a long, savory finish with strong character.
