Champagne Julien Prélat
Rosé Chantemerle Gourmandise
The Champagne Rosé Chantemerle Gourmandise by Julien Prélat originates from Celles-sur-Ource, in the Côte des Bar, an emblematic terroir where Pinot Noir reveals one of its purest and most velvety expressions. The vineyards, rooted in clay-limestone soils and benefiting from optimal exposures, yield grapes of full maturity and natural aromatic richness — qualities that find harmony in this elegant interpretation crafted by the young vigneron.
This edition, based on the 2023 vintage, is made from 100% Pinot Noir, harvested at perfect ripeness and subjected to a short maceration to gently extract color and fragrance. Spontaneous fermentation takes place in small stainless-steel vats, without filtration or fining, in order to preserve the clarity of the fruit and the vitality of the terroir. It then undergoes around 24 months of lees ageing, which imparts creaminess and aromatic depth. The final dosage of just 3 g/l, in Extra Brut style, enhances purity and mineral tension, offering a genuine and luminous expression of the Pinot Noir from Celles-sur-Ource.
On the palate, Chantemerle Gourmandise Rosé displays a refined copper-pink hue with bright reflections and a fine, persistent mousse. The bouquet opens with notes of wild strawberry, pomegranate, sweet spice, and delicate citrus hints. On tasting, it reveals a perfect balance between fruity softness and vibrant freshness, supported by a harmonious structure and a saline persistence that extends the finish with elegance. A Rosé of character and precision, uniting gourmand richness and refined finesse in a composition of great expressive coherence. Limited production of 1,970 bottles and 90 magnums.
