The Champagne Cuvée n°749 by Jacquesson embodies a philosophy rare in Champagne, that of composing the finest possible blend each year from a single harvest, without chasing an unchanging house style but letting the vintage speak fully for itself. Born exclusively from grapes of the Grande Vallée de la Marne, among the villages of Aÿ, Dizy, Hautvillers and Champillon and the chalky soils of Avize and Oiry in the Côte des Blancs, it takes shape through low yields and a relentless pursuit of precision and transparency.

This edition n°749, born from the 2021 harvest and completed by a generous share of vin de réserve, shows a clear predominance of Chardonnay grapes alongside Pinot Noir and Meunier, with vinification and fermentation carried out in large oak foudres and without any filtering or fining. After the tirage it undergoes a long maturation on the lees for a minimum of 36 months, while the final dosage of 2 g/l, in an Extra Brut style, supports its tension without ever masking its saline, mineral signature.

On tasting, Cuvée n°749 reveals a finely chiselled bouquet of ripe citrus, white peach and delicate toasted notes, sweet almond and wild flowers, an introduction to a profile of great clarity, depth and energy. On the palate it strikes for its balance between breadth and tension, with a dense, vibrant substance carried by a marked salinity and an ultra-fine mousse, leading towards a long, chalky and remarkably precise finish.
