Les Prés Dieu B.O.

The Champagne Prés de Dieu B.O. by Guillaume Sergent is a special edition, defined as “oubliée” – literally “forgotten” – because it results from an extended ageing on the lees compared to the traditional release. The initials B.O. on the label stand for “bouteilles oubliées”, highlighting this particular choice of the vigneron.

As always, it is a Blanc de Blancs from 100% Chardonnay, sourced from two prestigious parcels (Lieux-Dits) in the Montagne de Reims: Les Prés in Vrigny, with east-facing sandy soils, and Les Vignes Dieu in Coulommes-la-Montagne, south-facing and rooted in more calcareous soils. Two complementary expressions that, when united, give the wine energy, tension and mineral elegance.

This edition is based on the 2017 harvest, vinified and matured entirely in oak barrels, with spontaneous fermentations and an artisanal approach. After tirage, the cuvée rested for about 60 months on its lees, developing complexity and finesse. Disgorgement was carried out without any final dosage – Extra Brut, to emphasize purity and precision of expression.

On the palate, Prés de Dieu B.O. reveals great depth and refinement. In the glass it shows a bright golden colour with a fine and persistent bead. The nose offers complex aromas of ripe yellow stone fruit, candied citrus, dried flowers and almond, enriched by mineral accents, hints of honey and sweet spices, hallmarks of the prolonged ageing. The palate is tense and precise, with a full and vibrant texture that retains drive and energy. A chalky, mineral backbone carries the wine toward a long, saline and incisive finish, leaving behind elegance and persistence. A Blanc de Blancs that combines both power and finesse, elevated by its “oubliée” soul which amplifies its complexity.

Production is extremely limited, with only 263 numbered bottles.
