The Champagne Eurêka! by Chavost carries in its name the excitement of a discovery, that of the most authentic character of the Pinot Noir from Chavot-Courcourt, in the Vallée de la Marne, told without artifice within the sans sulfites ajoutés range. Five hectares entirely farmed organically express a transparent viticulture that respects the land, while the labels of the line pay tribute to the growers who gave life to the cooperative.

This edition shows a clear prevalence of Pinot Noir grapes, completed by Chardonnay and Meunier in equal parts and obtained exclusively from the tête de cuvée, with vinification and spontaneous fermentation in temperature-controlled stainless steel thanks to indigenous yeasts and bacteria, without added sulphites or fining. After tirage, carried out with concentrated grape must, comes ageing on the lees for a minimum of 30 months, while dégorgement takes place with no final dosage, in Brut Nature style.

On tasting, Eurêka! reveals on the nose the typical nuances of the village's Pinot Noir, with buttery and milky notes and hints of grey pepper and chalk woven together with small red fruits, shaping a rich, layered aromatic profile of great personality. On the palate it shows intense vinosity, supported by great richness and a lively freshness that keeps it in balance, leading to a deep and persistent finish that marks the unmistakable style of the cuvée.
