Union Magnum

The Champagne Union by Aurore Casanova is an assemblage cuvée that celebrates at once the union of two people and the meeting of two exceptional Grands Crus, born in equal parts from Pinot Noir and Chardonnay. The Pinot Noir comes from the "Les Petites Vignes" plot in Puisieulx, in the northern part of the Montagne de Reims, from old massale-selection vines planted in 1968, while the Chardonnay comes from the "Rose et Jutées" plots in Le Mesnil-sur-Oger, in the Côte des Blancs, on chalky soil with southern exposure.

This edition in Magnum format, based on the 2019 and 2021 harvests, sees both grape varieties undergo spontaneous vinification and fermentation followed by around 10 months of maturation in fût de chêne, carried out without racking or filtration to naturally preserve the integrity and purity of the wine. After tirage comes ageing on the lees for at least 48 months, while the final dosage, very low and in Extra Brut style, enhances its tension and transparency.

In tasting, Union stands out for a precise and chalky profile, in which the citrus tension and lemon zest notes of the Chardonnay intertwine with the breadth and savoury complexity brought by the Pinot Noir. On the palate the attack is taut and vertical, with a fine perlage accompanying a dense yet never heavy texture, in constant balance between freshness and depth, leading to a long and elegant finish marked by clear salinity and a return of the citrus notes. Production in a limited run of 127 individually numbered Magnums.
