Champagne Augustin
O² Rosée
The Champagne O² Rosée by Augustin gives voice to water, the fourth element and the closing chapter of the range inspired by Earth, Air, Fire and Water, through which the Domaine expresses its vision of wine as part of a wider natural balance. The setting is Avenay-Val-d’Or, a Premier Cru village overlooking the Vallée de la Marne, where the family farms one of the most original estates in Champagne under Demeter-certified biodynamics, guardian of a winegrowing tradition dating back to the early twentieth century and of an approach that sees vineyard, cellar and people as a single living organism.
This edition, from the 2020 harvest, is made exclusively from Pinot Noir grapes from old vines in Avenay, picked at optimal ripeness and produced using the saignée method, with a short skin maceration that gives the wine colour and structure. Vinification and fermentation take place spontaneously with indigenous yeasts, followed by eleven months of maturation on the lees entirely in oak foudres. After tirage the wine ages on its lees for around 36 months, and the cuvée is finished with no final dosage to preserve its purity and identity in full.
On tasting, O² Rosée shows an intense pink hue with a fine, lively perlage, opening onto an aromatic profile of crisp red fruit and small dark berries, crossed by mineral hints with an iron-like touch and delicate spicy notes that reflect its maturation in wood. On the palate it is natural, soft and enveloping, supported by vibrant freshness and polished tannins that give it structure and depth, in a balance that combines savoury tension with fruity generosity. The finish is long and persistent, true to an authentic, unadorned interpretation of Avenay Pinot Noir.
