The Champagne Éocène by Legrand-Latour is a wine of extraordinary authenticity, born from the meeting of ancient geology, artisanal precision and deep respect for the environment. The grapes come from parcels in Verneuil and Vandières, from a land marked by strata dating back to the Eocene, between 56 and 34 million years ago, where landslides and debris have shaped rare soils based on silty-clay sands and green clays that lend an unmistakable mineral imprint.

This edition, from the 2021 harvest, shows a prevalence of Meunier grapes accompanied by 25% Chardonnay, the two souls of the terroir between tension and roundness. Vinification and maturation take place over twelve months in fût de chêne, with no added sugars or fining, and after the tirage the wine rests for at least forty months on the lees, while the absence of a final dosage, in a Brut Nature style, underlines its purest and most essential form.

On the palate, Éocène appears luminous with a fine and persistent perlage, opening on the nose with fresh, complex notes of citrus, white flowers and wet stone, destined to evolve over time towards dried fruit, delicate spices and chalky minerality. The palate is taut, incisive and harmonious, with a marked verticality sustained by the natural energy of the grapes and the long rest on the lees, in a finish that confirms depth and authenticity. The total production amounts to 5,727 bottles.
