The Champagne Stellaire de Breux by Alexandre Chaillon is a Blanc de Blancs that takes shape from a single parcel in the Coteaux Sud d'Épernay, in the lieu-dit Terre de Breux (lieu-dit), within the village of Brugny, where the landscape speaks of a precise vocation for Chardonnay. On soils of chalky and limestone origin dating back to the Campanian, old vines grow that render a clear, terroir-driven reading of this corner of Champagne, made of finesse, light and depth.

This edition, Vintage 2020, expresses Chardonnay in a pure and complete reading, vinified partly in tonneau and partly in concrete eggs, with eleven months of maturation on the fine lees during which the malolactic fermentation takes place, without filtration or fining. After the tirage comes an ageing of around 40 months on the lees, before a dégorgement with no final dosage, in Brut Nature style.

On tasting, Stellaire de Breux 2020 stands out for the elegant creamy and citrus notes that open the palate with momentum and luminosity, outlining from the very start a profile of great finesse, balance and definition. On the palate a deep, persistent saline imprint emerges, developing with energy and continuity, sustained by a steady tension and a slender structure that carry through to a long, vibrant finish of rare expressive precision. Production in a limited run of 1,438 bottles and 200 magnums.
