André Beaufort

Champagne André Beaufort originates in Ambonnay, a Grand Cru village in the Montagne de Reims, and stands as one of the most emblematic estates of natural viticulture in Champagne. The Domaine, covering around 6.5 hectares between Ambonnay and Polisy in the Côte des Bar (Aube), owes its identity to the turning point of the 1970s, when André Beaufort abandoned synthetic chemicals following an allergic reaction, becoming a pioneer of organic farming in the region and setting a path still followed today.

Work in the vineyard is meticulous and sustainability-driven: manual soil cultivation, use of compost and natural fertilizers, preservation of biodiversity, and practices such as homeopathy and self-produced essential oils to combat vine diseases. In the cellar, traditional methods are maintained, with fermentations carried out by indigenous yeasts, tirage using must and raw sugar, and liqueur d’expédition made from concentrated grape juice, all in full respect of the wine’s integrity.

Disgorgement is performed à la volée, a choice that allows the vigneron to assess each bottle before closure and intervene with precision. Ageing periods are notably long: at least 24 months for Brut Réserve and no less than 5 years for vintage wines, with some Vinothèque cuvées exceeding 30 years on the lees, resulting in Champagnes of remarkable depth, longevity, and strong artisanal identity.
