Champagne Ulysse Collin
Rosè Les Maillons
The Champagne Rosé de Saignée Les Maillons by Ulysse Collin comes from a single 2.5-hectare plot located in Barbonne-Fayel, in the Côteaux du Sézannais, planted exclusively with Pinot Noir vines around 40 years old. The soils, composed of silty clay over a chalky subsoil, impart depth and tension to the wine.
Vinification follows the traditional rosé de saignée method, with 24–36 hours of maceration on the skins and spontaneous fermentation in small oak barrels, without fining or filtration. Ageing continues for at least 36 months on the lees, with a minimal dosage of around 1–2 g/l – Extra Brut. Production is extremely limited, ranging from 1,500 to 3,000 bottles per vintage.
The artisanal, low-intervention approach of Olivier Collin, combined with his refusal to resort to technological shortcuts, fully expresses the character of the Les Maillons vineyard. The east-facing exposure and the nature of the soil encourage steady ripening and high aromatic concentration, resulting in a Champagne of substantial structure yet refined elegance.
On the palate, Rosé de Saignée Les Maillons opens with intense notes of cherry, pomegranate, and raspberry, accented by floral nuances and delicate sweet spices. The palate is vibrant and enveloping, with a silky texture, a pronounced mineral streak, and a long, saline finish, confirming the precision and finesse of Ulysse Collin’s style.
