The Champagne Les Roises Collection by Ulysse Collin is a Blanc de Blancs Extra Brut crafted exclusively from Chardonnay grown in a tiny monopole lieu-dit of just 0.6 hectares located in Congy, in the Coteaux du Morin. The vines, with an average age of over 65 years, are planted on clay and silex soils over an active chalk subsoil, a terroir that imparts structure, depth, and a rare mineral tension to the wine. Its southern exposure ensures full and harmonious ripening, preserving freshness and elegance.

This rare and distinctive “Vieillissement en cave de 48 mois” edition is based on the 2015 vintage and, unlike the “classic” Les Roises, benefits from an additional 12 months of bottle ageing. Vinification follows the rigorous artisanal principles of Olivier Collin: manual harvesting, gentle pressing, spontaneous fermentation with indigenous yeasts in second- and third-use Burgundy barrels, and ageing on fine lees without fining or filtration. The blend includes a significant proportion of vin de réserve (up to 60%) and is disgorged with an Extra Brut dosage (1–2 g/l) to highlight purity and aromatic precision.

On the palate, Les Roises Collection reveals an intense bouquet of candied citrus, ripe peach, white flowers, and delicate hints of hazelnut and brioche. The mouthfeel is broad and silky, with an enveloping mineral texture and vibrant acidity that extends the finish with saline and chalky sensations of great finesse and persistence.
