Champagne Pertois-Moriset
PM.07 Édition
The Champagne PM.07 Édition by Pertois-Moriset is a Blanc de Blancs crafted from 100% Chardonnay, sourced from the family’s Grand Cru vineyards in the prestigious Côte des Blancs. This edition comes from the 2020 harvest, with vinification and maturation divided between fût de chêne (53%) and stainless steel (47%). After the tirage, the wine ages for at least 36 months on the lees, reaching the bottle with an Extra Brut dosage (1.5 g/l) that defines its pure and rigorous style.
On the nose, PM.07 Édition stands out for its intense aromatic expression, where yellow fruits and white flowersintertwine with deeper nuances. On the palate, it reveals a refined mousse, a balance of freshness and complexity, enriched by notes of toast, yeast and pastry. Its vertical structure and elegant persistence highlight both its gastronomic vocation and its potential to evolve over time.
A limited release of only 3,199 bottles and 150 magnums crowns this Champagne as a rare and distinctive expression, embodying the Domaine’s pursuit of precision and authenticity.
