Pascal Mazet carries forward an artisanal vision of Champagne in Chigny-les-Roses, a Premier Cru village in the Grande Montagne Nord, within the Montagne de Reims. Founded in 1981 and now led by his son Olivier, this family estate works around two hectares of Premiers and Grands Crus, converted to organic farming since 2009. The work in the vineyard rests on respect for natural balance and soil biodiversity, where old vines averaging some thirty-five years bring together the three classic Champagne varieties alongside rare grapes such as Pinot Blanc, the Domaine's most precious heritage.

Pascal Mazet's philosophy follows a low-intervention approach, both in the vineyard and in the cellar. Soil work is kept to a minimum to preserve the vitality of the land, while organic conversion allows the chalky-clay terroir to express itself fully. In the cellar, the base wines rest and ferment in aged oak barrels for around eleven months before the second fermentation, a choice that enhances the wine without masking its aromas. Each cuvée then undergoes an exceptionally long ageing on the lees, never less than five or six years.

Pascal Mazet's Champagnes stand out for an authentic, terroir-driven profile, marked by mineral tension, finesse and remarkable aromatic richness. The extended ageing on the lees lends the wines complexity and structure, while the mature oak accompanies their aromas without ever covering them. The cuvées express the elegance, balance and harmony of the terroir, with a vibrant acidity and a long persistence that define these deeply personal, artisanal Champagnes, produced in extremely limited quantities.
