Cuvée Mètonymie V22
The Champagne Métonymie by Pascal Lejeune is the result of a careful cuvée that combines 60% Meunier, 30% Chardonnay and 10% Pinot Noir grapes from vines of about 30 years old located in the renowned villages of Vinay, Moussy and Épernay, in the heart of the Vallée de la Marne.
The base is made up of the 2022 harvest, enriched with 53% vin de réserve, giving the wine greater complexity and depth. The vinification takes place in stainless steel tanks, without malolactic fermentation or cooling processes, to preserve the freshness and purity of the fruit. The Champagne rests on the lees for over 24 months, reaching a perfect balance, with a final dosage of 4 g/l, making it a Extra Brut.
On the palate, the Champagne Métonymie stands out for its complexity and aromatic depth. Elegant notes of brioche, ripe fruit and toasted nuances are perceived, balanced by a delicate floral aroma that harmonizes all the components of the wine. It is a versatile Champagne, ideal both as an aperitif and in combination with fresh salads, white meats or soft cheeses.
