The Champagne L’Évidence by Legras & Haas is a Blanc de Blancs that expresses a quest for the essential, a pure and measured gesture sculpted from the matter and light of the terroir of Chouilly, a Grand Cru of the Côte des Blancs. The Chardonnay grapes come from old vines at the top of the slopes, where the chalky soils give the wine a precise mineral imprint and a natural tension that define its most authentic identity.

This edition, based on the 2021 harvest, undergoes vinification and fermentation entirely in stainless steel at low temperature, a choice that protects the most delicate aromas and offers a crystalline reading of the fruit. After tirage, the wine ages on the lees for more than 48 months, while the final dosage of 3 g/l, in Extra Brut style, shapes a profile that is rigorous yet never sharp, giving full voice to the chalk of Chouilly.

On tasting, L’Évidence opens with clear aromas of white peach and lemon blossom, accompanied by a subtle earthy note reminiscent of the craie. On the palate it is linear and vibrant, lit up by a citrus freshness that unfolds over a saline and chalky texture, while the fine and polished mousse brings balance and energy to a slender and precise structure that keeps its depth through to a long and coherent persistence.
