The Champagne Les Hautes Chèvres 2018 by Georges Laval is a Blanc de Noirs, Meunier and Pinot Noir, assembled with grapes coming from vineyards planted in 1930 and 1959. This great Champagne Blanc de Noirs is only produced in exceptional vintages, with ripe grapes; it rests 10 months in oak barrels and 4 more years in the cave, before reaching the market. Champagne Georges Laval, based in Cumières in the Vallée de la Marne, is among the pioneers of organic viticulture in Champagne, certified as early as 1971. The Laval family has carried forward a consistent and uncompromising vision for generations, now led by Vincent Laval, combining respect for Champenoise tradition with a deep commitment to the natural balance of the vineyard. Soil work is central, with practices aimed at enhancing microbial life, limiting erosion and encouraging deep root development, while the vines, often over 30 years old and in some cases exceeding 70, represent a key asset for the identity of the wines.

This philosophy is reflected in every decision, from the manual management of the vineyards to the exclusive use of natural practices for plant protection, through to a restrained and respectful approach in the cellar. The goal remains to preserve the aromatic integrity and the pure expression of the terroir, without manipulation. The result is Champagne of great authenticity, capable of precisely conveying the character of Cumières, combining energy, depth and a stylistic coherence that makes them immediately recognizable.
