Champagne Drappier
Blanc de Blancs
The Champagne Blanc de Blancs by Drappier tells the calling of the CĂ´te des Bars for Chardonnay, grown on the Jurassic Kimmeridgian limestone from which it draws a mineral tension that echoes the Grand Cru of Chablis. It is the expression of a grape placed at the service of its own terroir, where the rigour of the limestone turns into luminous elegance and gains that gourmand touch long sought by the Maison, the authentic signature of an unmistakable style.
This edition, a blend of several harvests supported by vin de réserve, rests mainly on Chardonnay grapes at 95% completed by 5% of Blanc Vrai, a variety belonging to the Cépages Oubliés that lends its distinctive gourmand note. Vinification and fermentation take place by gravity, while 5% of the wines mature in foudre. After the tirage a maturation on the lees follows for at least 30 months before the final dosage of 5.5 g/l, in a Brut style, defines its profile.
In tasting, it opens on a bouquet of white peach and pear enriched by floral nuances recalling peony, in a clean and crystalline profile of great aromatic finesse. On the palate it reveals itself mineral and lightly biscuity, with a creamy, enveloping texture crossed by a constant freshness that sustains its drive without ever weighing it down, prolonging the persistence into a taut, saline and luminous close of great balance.
