Vallée Aÿ Millésime 2014
The Champagne Vallée AŸ by Domaine Les Monts Fournois originates in the Grand Cru village of Aÿ, in the Vallée de la Marne, and represents a precise and refined interpretation of Pinot Noir in this historic terroir. The project led by Raphaël and Vincent Bérêche, together with Juliette Alips, is built around a rigorous study of Premier Cru and Grand Cru villages, with the aim of crafting cuvées that clearly express identity, vintage, and origin. The name “Vallée” refers to the vineyard’s exposure, set in a north-facing valley that enhances tension and elegance.
This edition, Vintage 2014, develops through vinification and fermentation focused on expressive precision, followed by extended lees ageing for at least 8 years, building depth and complexity while maintaining balance and definition. The final dosage, in Extra Brut style, supports the wine with restraint, highlighting purity of fruit and overall coherence.
On the palate, Vallée AŸ Millésime 2014 stands out for its fine and layered profile, with notes of citrus, white flowers, and fresh hazelnut, accompanied by a marked mineral character. The structure is taut and deep, supported by a creamy and well-integrated mousse that leads to a long, balanced, and persistent finish, expressing a Champagne of great precision and refinement.
