The Champagne Adonis Annua by Clément & Fils is a Blanc de Blancs sourced from selected vineyard parcels in the Vallée du Petit Morin, between Congy and Coizard-Joches, conceived as an identity-driven project linked to the revival of biodiversity in the domaine’s vineyards. The name refers to Adonis annua, a wild flower that has returned to grow among the vines thanks to an agricultural approach respectful of soils and their natural balance. This cuvée interprets Chardonnay from the southern sector of Champagne through a lens of finesse, freshness, and terroir transparency, maintaining a restrained profile fully aligned with the Clément family’s artisanal philosophy.

This edition is based on the 2018 vintage, complemented by reserve wines from the 2017 vintage in a proportion of approximately 83% 2018 and 17% 2017. Vinification prioritizes precision and restraint, with a respectful approach to the raw material aimed at preserving aromatic integrity and the wine’s natural energy. After tirage, the wine undergoes an ageing on the lees of around 48 months, a key stage in shaping its expressive depth. The low dosage, at approximately 2 g/l, places the cuvée in the Extra Brut style, enhancing its tension, drive, and terroir clarity.

On the palate, Adonis Annua reveals a bright and refined profile, marked by citrus notes, white fruit, and delicate floral nuances. It shows an agile, well-calibrated structure, supported by vibrant acidity and a progressive salinity that carries the wine through its development. The finish is clean and linear, with an overall balance built on precision, freshness, and natural drinkability.
