Champagne Hervé Brisson
Les Aulnes
The Champagne Les Aulnes by Hervé Brisson is a Blanc de Blancs made exclusively from Chardonnay grapes, grown according to organic farming principles in the Vallée du Petit Morin, on character-rich chalky soils. The cuvée is based on the 2021 harvest, complemented by 30% vin de réserve, selected to bring balance and depth.
Vinification takes place without fining or filtration, with spontaneous fermentations and a calibrated use of oak barrels for around 10 months. Ageing continues for a minimum of 24 months on the lees, a choice that allows the wine to develop greater aromatic complexity and a fine, elegant mousse. The Extra Brut dosage, limited to just 1 g/l, highlights the purity of the Chardonnay and gives full voice to the saline energy and mineral tension of the terroir.
On the palate, Les Aulnes reveals a precise and vibrant profile: green apple, lemon peel, white flowers, and light hints of bread crust blend into a refined bouquet. The taste is taut and vertical, with a saline finish that reinforces its persistence and underlines its territorial identity. A cuvée that faithfully expresses Hervé Brisson’s essential and rigorous vision.
