Le Long du Chemin

Champagne Le Long du Chemin by Hervé Brisson is the result of 100% Chardonnay from vines of only one plot owned by the Domaine in the Vallée du Petit Morin.Produced starting from the 2020 harvest, this Blanc de Blancs vinifies "sous bois" or "under wood" for more than 10 months, a method considered a true catalyst of aromas and capable of sublimating the expression of the terroir. Champagne Le Long du Chemin does not undergo clarification or filtration processes and is certified BIO. Dosage in the Extra Brut parameters (4 g/ l). Its aromas of white flowers and citrus fruits make it ideal with fish and shellfish dishes.

Hervé Brisson

Founded in 1952, Domaine Hervé Brisson is located in Vert-Toulon, in the Vallée du Petit Morin, and is currently managed by Hervé, who inherited the business from his grandfather. The vineyard, with an area of 3.30 hectares of which 3.05 are cultivated with Chardonnay, has an average age of over 40 years and has been managed in Organic Agriculture since 2016. The 2019 harvest was the first AB certified.

Vinification of the cuvées in oak barrels without filtration or clarification and few sulphites, with the aim of preserving the aromas of the grapes and enhancing the expression of the terroir. The use of oak barrels is an important qualitative element for the finish and organoleptic profile of Champagne Hervé Brisson, which have pleasant woody scents ranging from toasted vanilla almonds, toasted bread and cloves, depending on the aging and the degree of barrels toasting.
