Blanc d’Assemblage "Wimbledon Edition"

The Champagne Blanc d'Assemblage by Chavost expresses the spirit of the sans sulfites ajoutés range, a line designed to convey with the utmost transparency the voice of the vineyards of Chavot-Courcourt, in the Vallée de la Marne, and whose labels pay tribute to the growers who gave life to the cooperative. Five hectares farmed organically reflect a concrete commitment to respectful and conscious viticulture, able to translate into authentic and recognisable wines.

This Wimbledon edition, dedicated to the partnership with the prestigious tournament and dressed in a celebratory label, follows the Blanc d'Assemblage by combining Chardonnay and Meunier grapes in equal parts from the tête de cuvée only, with vinification and spontaneous alcoholic and malolactic fermentation, 70% in stainless steel and 30% in fût de chêne, without added sulphites or fining. After tirage, carried out with concentrated grape must, comes 36 months of ageing on the lees, while dégorgement takes place with no final dosage, in Brut Nature style.

On tasting, Blanc d'Assemblage opens with intense and generous aromas of red fruits and indulgent notes of candy, complemented by milky and buttery nuances that enrich and soften its aromatic profile. On the palate it is vinous and silky, perfectly balanced between softness and structure, with a smooth and satisfying progression that leads to a harmonious, clean finish of fine persistence, a faithful expression of its authentic and distinctive personality.
