The Champagne Les Fioles 2021 by Alizée et Thibault Tassin was conceived as an authentic portrait of Pinot Noir from the Côte des Bar, a pure expression of terroir, family memory, and natural winemaking. Sourced from the eponymous Lieu-dit Les Fioles, located in Celles-sur-Ource, this Blanc de Noirs embodies the most personal and artisanal vision of the young Tassin vignerons, devoted to preserving and renewing the legacy handed down by Thibault’s grandfather. The clay–limestone soils, southern exposure, and organic approach to vineyard management contribute to shaping a harmonious balance between sunny strength and mineral finesse, within an ecosystem that values biodiversity and respect for natural cycles.
Born from the 2021 harvest, this cuvée comes from old massal-selected Pinot Noir vines planted by Thibault’s grandfather. The entire vinification in oak barrels and amphorae follows the most natural process possible: all stages—fermentation, clarification, and stabilization—unfold spontaneously, with no additives or intervention. The wine matures for around 12 months between wood and amphora before tirage, followed by 30 months of lees aging, which refines its structure and enhances its aromatic complexity. No dosage is added at disgorgement (Brut Nature), in keeping with the Domaine’s essential philosophy that favors the genuine expression of fruit and terroir.
Production is extremely limited: only 745 bottles, a testament to the rare and artisanal nature of this cuvée.In tasting, Les Fioles 2021 opens with notes of ripe citrus, yellow apple, fresh hazelnut, and smoky nuances, evolving toward hints of acacia honey and flintstone. On the palate, it reveals energy and purity, with a dense yet silky texture sustained by a vertical mineral tension. The absence of dosage highlights the honesty of the fruit and the depth of Pinot Noir, while the long, saline persistence concludes on a precise and vibrant finish. A Champagne of great precision and identity, it tells the story of the Côte des Bar through the sensitive lens of Alizée and Thibault Tassin.
