The Champagne Nicolas François by Billecart-Salmon is a Cuvée de Prestige created in 1964 to honor the Maison’s founder. This Millésime 2012 edition results from a meticulous selection of the finest grapes sourced exclusively from Grands and Premiers Crus villages (90% Grand Cru, 10% Premier Cru): Äy, Verzenay, and Mareuil-sur-Äy for Pinot Noir, and Mesnil-sur-Oger, Chouilly, and Avize for Chardonnay. The 2012 vintage was marked by a challenging growing season — frost, heavy rains, hail, drought, and mildew that reduced yields — yet from July onward, a bright and balanced summer led to a slow, concentrated ripening, producing grapes of exceptional quality and one of the greatest vintages of the decade.

Vinification takes place mainly in stainless steel, with 10% in fût de chêne, following the classic style of the Maison. After tirage, the wine undergoes a long aging of over 10 years on the lees, which imparts depth, structure, and aromatic maturity. The final dosage, kept at 3.8 g/l, defines an Extra Brut style that enhances the purity, precision, and mineral balance of the cuvée. The result is a Champagne of breadth and generosity, where freshness, elegance, and complexity coexist in perfect harmony — a testament to the technical mastery of Billecart-Salmon.

On the palate, Nicolas François 2012 reveals a brilliant golden hue with antique gold reflections and a fine, persistent effervescence. The bouquet is intense and layered, offering notes of yellow-fleshed fruit, toasted almond, Mirabelle plum, and ripe clementine, intertwined with floral hints of acacia and hawthorn. The palate displays perfectly balanced tension, wrapped in a full and harmonious texture, where flavors of honeyed biscuit, lemon pulp, Bourbon vanilla, and linden leaf merge beautifully. Its chalky framework defines a vertical, elegant structure, while the refined dosage enhances both length and purity, leading to a finish of sweet spices, cigar box, and subtle white pepper.
