The Champagne Cuvée de l’Orme by Benoît Déhu is an elegant Blanc de Noirs that embodies the essence of craftsmanship and a profound bond with the terroir. Made exclusively from Pinot Noir, this Champagne comes from a parcel selection located at the foot of the hill of the village of Fossoy, in the Vallée de la Marne, where the vines originate from a massal selection of clones originally from Pommard. The vineyards are farmed biodynamically, following the lunar calendar and promoting biodiversity, in full coherence with the philosophy of respect for nature upheld by the vigneron.

This edition, from the 2019 base vintage, follows a vinification in 228-liter oak barriques, where the wine ferments spontaneously and matures for about 10 months, developing depth and complexity without losing its aromatic purity. No fining or filtration is used, in order to preserve the maximum integrity of the fruit and the full expression of the soil. After the tirage, the wine ages for at least 48 months on the lees and is disgorged without any final dosage, in Brut Nature style.

On tasting, Cuvée de l’Orme opens with elegant tension and a precise aromatic profile, made of fresh red fruits, dark citrus and delicate spicy notes coming from the maturation in oak. On the palate it is deep and vibrant, with a solid yet fine texture, supported by a dark minerality and incisive linearity. The persistence is long and clean, marked by a saline energy that amplifies the sense of verticality and highlights the expressive purity of the Pinot Noir of Fossoy.
