DOM PÉRIGNON VINTAGE 2012

The 2012 vintage is full of paradoxes as concerns pure oenology; it gave birth to a great wine that has overcome countless challenges. Nature showed its unpredictable and implacable face, with a series of climatic events affecting the vineyards: winter and spring frosts, torrential rains, hailstorms and waves of intense cold while the vines were budding, as well as strong summer heatwaves. Warm, dry weather dispelled any worries about the grapes being healthy and encouraged the grapes to ripen. The harvest was carried out between 10 and 26 September, depending on the plots. Tasting the grapes revealed a magnificent promise, a balanced tension between freshness and generosity.

Dom Pérignon Vintage 2012 is rich and varied to the nose, combining flowers and fruit, followed by vegetal and mineral notes. The bouquet is tactile, a discreet invitation to follow the powdery trail of white flowers and sweet apricot, culminanting into the freshness of rhubarb and mint, and the minerality of ash. Hints of white pepper. Energy dominates the palate. After a pleasant opening, the wine quickly becomes vibrant and then explodes: the effervescence bursts through, the sensation is tonic. The finish, which converges on acidic and bitter notes, brings a penetrating tension, marked by ginger, tobacco and toasted aromas.

Since 1990 Richard Geoffroy has been Chef de Cave and father of the Vintages Dom Pérignon and the one embodying the spirit of Dom Pierre Pérignon. Dom Pérignon only creates Vintage Champagnes, from the best selected grapes from a single year of vintage. It never ends its innovating experience and always offers the best of the vintage. It refuses compromises and does not produce its Vintages when the vintage is not at its best- After a 8-year vinification, the wine reaches a perfect balance, the most beautiful product of the Maison: this is Dom Pérignon Vintage. P2 is Deuxième Plénitude by Dom Pérignon, the result of a 16-year process of elaboration. All assemblage ingredients are well mixed and grant the Vintage a stronger intensity, liveliness and precision: Champagne energy at its best! P3 is Troisième Plénitude by Dom Pérignon, the result of a 25-year process of elaboration. The Champagne gains an even more essential structure, enriched by a slow and deep integration. This is a sublime wine, more complex than ever. The Troisième Plénitude is Dom Pérignon's soul.
