The Champagne Œil de Perdrix by Nathalie Falmet brings back to life an ancient and almost forgotten tradition of the Côte des Bar, where Pinot Noir finds a unique expression that belongs neither to the Blanc de Noir nor to the Rosé. Its salmon-pink hue with amber highlights recalls the delicate outline of a partridge's eye and conveys an interpretation made of precision and respect, in which every gesture aims to preserve the purity of the fruit and the mineral energy of the Kimmeridgian soils.

This edition, 2022 harvest, expresses the full character of Pinot Noir through a brief maceration on the skins that gently extracts colour and aromatic compounds without weighing down the wine. Vinification and fermentation are carried out spontaneously in stainless steel tanks, while after tirage follows an ageing of 24 months on the lees, capable of lending depth and complexity. The final dosage of 5 g/l, in Brut style, safeguards the balance between vibrant freshness and expressive richness.

On tasting, it reveals great elegance free from the heaviness typical of a traditional rosé, with a measured and perfectly integrated structure. The gustatory texture unfolds with tension and precision, supported by a mineral freshness that runs through the entire drink. The long, dynamic finish confirms the wine's rare coherence, where liveliness, depth and persistence merge into a harmonious and finely chiselled whole.
