Champagne Tristan Hyest
"Argile, Craie et Sable" Millésime Vinothéque 2007
The Champagne “Argile, Craie et Sable” Vinothèque by Tristan Hyest carries in its name the geology that shapes it. Clay, chalk and sand alternate in the vineyards the vigneron farms around the village of Trélou-sur-Marne, in the Vallée de la Marne. On south- and east-facing plots, each soil leaves its own mark on the wine, with the generosity of the sands, the depth of the clays and the mineral tension of the limestone, in an authentic and layered expression of the land.
This edition, Vintage 2007, shows a prevalence of Chardonnay grapes at 45%, complemented by Pinot Noir at 30% and Meunier at 25%, with vinification and fermentation in stainless steel tanks to preserve the freshness and definition of the fruit. After tirage comes more than 17 years of ageing on the lees, an exceptional length of time that earns the Vinothèque designation and gives the wine great evolved complexity, while the final dosage, in an Extra Brut style, keeps its purity and tension intact.
On tasting, “Argile, Craie et Sable” 2007 shows a deep gold hue and an evolved, deep nose, where dried fruit, honey and candied citrus join notes of brioche, toasted bread and a light hint of undergrowth from the long contact with the lees. On the palate the structure is broad and creamy, with a very fine, well-integrated perlage and still lively acidity that keeps the wine taut and balanced, carrying it through to a saline, mineral finish of great length. Production in a limited run of 342 bottles.
