The Domaine Jean Servagnat, named after its founder, is located in Coulommes la Montagne, in the "Petite Montagne" sub-zone, in the extreme north of the Montagne de Reims, an area specialises in growing Meunier, which is well suited to the typical cold and rainy climate of the north. The Domaine is run by Jean Servagnat, a young winemaker who has made Biodynamic agriculture his strong point. The Domaine has 1.5 hectares of predominantly Meunier, with a smaller part divided between Chardonnay and Pinot Noir.

The high quality of the vines is closely linked to respect for the environment: neither pesticides nor insecticides are used and the so-called "sexual confusion" is practised, that is, a system to confuse harmful insects and reduce their presence in the vines; in the same way, weed control techniques have been implemented. The objective is to maintain biodiversity and allow the grapes to fully express the clay- limestone identity of the terroir.

Each parcel has its own personality due to its grape variety, soil and climate. During the vinification process, thermoregulated tanks are used to maintain the freshness and balance of the wines, and wooden barrels are used to develop greater complexity. Fermentation takes place naturally using indigenous yeasts and bottling does not involve any kind of filtration. Annual production is around 6,000 bottles.
