Champagne Bruno Paillard
Dosage Zéro
The Champagne Dosage Zéro by Bruno Paillard is the natural extension of the path traced by the young and rigorous Maison born in Reims in 1981, a cuvée that springs from the pursuit of purity, energy and harmony. Conceived to overcome the risk of hardness that the region's sometimes austere terroir can induce without the right patience, it highlights the northern, chalky character of Champagne, celebrating Meunier in particular in a profile that unites vitality and finesse from the very first instant, with a clear prevalence of this variety coming from the terroirs of the Montagne de Reims and the first coteaux of the Rive Droite of the Vallée de la Marne, completed in equal parts by Chardonnay and Pinot Noir selected across more than 30 crus.
This edition is enriched with more than 50% vins de réserve drawn from a réserve perpétuelle, kept in solera style since the 2000 harvest. These wines come exclusively from the first pressing, and half of them go through vinification and maturation in small oak barrels. After tirage the wine ages for at least 36 months on the lees, and the dégorgement is carried out with no final dosage, in Extra Brut style, giving a beautifully balanced profile that brings out its chalky minerality.
In tasting, Dosage Zéro it stands out for purity, energy and balance rather than opulence, showing a dense, bright straw-gold hue animated by a very fine and persistent effervescence. On the nose it opens generous yet without opulence, with opening notes of white fruit and fresh almond that evolve towards ripe citrus, freshly baked bread and delicate hints of beeswax and mocha. On the palate the clean, taut attack reveals a texture at once broad and vinous, supported by a pinpoint bubble and a saline freshness that accompanies a chalky finish of fine persistence, where the absence of dosage lets all the authenticity of the terroir from which this wine is born emerge with sincerity.
