Rosé des Riceys "La Forêt" 2021
Rosé des Riceys "La Forêt" by Alexandre Bonnet is a rosé wine made from 100% Pinot Noir from the parcel of the same name in Les Riceys in the Côte des Bar. The Domaine uses sustainable viticulture practices to preserve and support biodiversity in the vineyards, all its wines are in fact certified HVE - Haute Valeur Environnementale. Millésime 2021, the grapes are selected according to the so-called massal selection from vines planted in 1974 to preserve their intra-varietal genetic variability and obtain grapes of the highest quality. The pressing is done by feet for about 1/5 of the total volume to which the whole bunches are then added; the semi-carbonic maceration lasts from 4 to 5 days with daily pumping over. The fermentation is done for 75% in steel and for the remaining 25% in barrels for 9 months and subsequent 2 years in the bottle so that the wine acquires greater complexity.Rosé des Riceys “La Forêt” is a singular wine, a paradox between strength and finesse: the nose is a complex of notes of red fruits, strawberry, cassis, wild strawberry, violet, quince, fresh almonds and peppermint. The mouth is full and vigorous with silky tannins and surprising length. A great Pinot Noir for gastronomy.
