Champagne Alexandre Bonnet
Blanc de Blancs
The Champagne Blanc de Blancs by Alexandre Bonnet is born on the steepest slopes of Champagne, at the gateway to Burgundy, where the renowned Kimmeridgian limestone lends the wines from Les Riceys an unmistakable aromatic signature. In the Côte des Bar the Domaine's philosophy weaves together respect for the terroir and the protection of biodiversity, with sustainable viticulture certified HVE that banishes herbicides and pesticides and encourages orchards, truffle oaks and honey-bearing fallow land, restoring renewed nobility to a cépage oublié such as Pinot Blanc.
This edition, from the 2018 harvest, brings together in equal parts Pinot Blanc grapes, a cépage oublié also known here as Blanc Vrai, and Chardonnay, selected through clonal and massale selection from vines around thirty years old so as to preserve their intra-varietal genetic variability. Vinification and fermentation proceed with slow pressing and static settling, followed by a natural malolactic fermentation, while after the tirage comes an ageing of at least thirty-six months on the lees. The final dosage of under 3 g/l, in an Extra Brut style, preserves its tension and purity.
On the palate, it appears with a pale gold hue run through by greenish glints that anticipates a fine and complex profile, shaded by an exotic touch. The structure is smooth and enveloping, supported by noble bitterish notes that shape its character, while the balance between freshness and substance leads towards a long and markedly saline finish of remarkable persistence and precision.
