The Champagne Bêtes à Bon Dieu by Adrien Salot comes from Chézy-sur-Marne in the Vallée de la Marne and reflects a project that interprets the territory through a free, essential and deeply artisanal approach. This cuvée takes shape from two distinct parcels, “Les Vignes Dieu” and “Les Vignes aux Bêtes”, where clay-limestone soils contribute to defining a tense and vibrant profile. The blend, composed in equal parts of Meunier and Chardonnay grapes, expresses the desire to combine energy, texture and precision while preserving a strong territorial identity.

This edition, Vintage 2016, follows a low-intervention philosophy, with vinification and fermentation carried out using indigenous yeasts and minimal sulphur additions. Maturation takes place for around 24 months in 400-litre oak barrels, without fining or filtration, in order to preserve the wine’s personality in its purest form. After tirage, the wine undergoes lees ageing for a minimum of 7 years, while the absence of final dosage, in Brut Nature style, guides the Champagne toward a direct, saline and highly gastronomic expression.

In tasting, Bêtes à Bon Dieu reveals aromas of ripe apple, citrus fruits, white flowers and dried fruit, accompanied by delicate toasted and chalky nuances. On the palate, it shows a broad yet dynamic structure, supported by precise minerality and vibrant freshness that lead into a long and savoury finish. A cuvée with an authentic character, capable of expressing the contemporary identity of the Vallée de la Marne with clarity and precision.
