Extra Brut - Blanc de Blancs
The Champagne Abelé 1757 Extra Brut - Blanc de Blancs is a limited edition and the result of a careful selection of the Champagne region's most promising terroirs for the creation of the blends: Côte des Blancs, renowned for its mineral character; the Sézannais, prized for its fruity intensity; and finally Côteaux Vitryats. The base of the cuvée comes from the 2019 vintage, from grapes selected in the prestigious areas of Côte des Blancs, Coteaux d'Épernay and Montagne de Reims, enriched with 20% vin de réserve from the Vitryat and Sézannais terroirs. After maturing for over 3 years on the lees, this Champagne undergoes a dosage reduced to just 3 g/l - making it an Extra Brut - thus enhancing its natural characteristics. In addition, the Chef de Cave introduced the ‘poignettage’ technique, which involves manual remuage throughout the ageing period, using poignettage to put the yeasts back in suspension to continue to nourish the wine. This process, similar to bâtonnage but applied directly in the bottle, was repeated 12 times, approximately once every three months. The result is extraordinary, with a Champagne that reveals an extraordinary harmony in a purer and more elegant form.
When tasted, this
Champagne Blanc de Blancs has a bright and luminous golden colour, enriched by silver reflections that set off its refined and dynamic bubbles, sumptuous and lively, and shaping a constant trail. On the palate, the attack is generous, with a balanced tension that enhances the fullness and envelopment of the
Chardonnay. The first hints of ripe apricot are joined by lively notes of pomegranate and currant, offering an intriguing fruity complexity. The finish is long and aromatic, dominated by elegant notes of toasted brioche, closing with a vibrant minerality that cleanses and refreshes the palate in an invigorating way. A sophisticated and harmonious expression, perfect for those seeking a Champagne with a strong yet refined character. Produced in a limited edition of just 1,757 bottles (corresponding to the year the Maison was founded).
