In Charly-Sur-Marne, in the Vallée de la Marne, there is the Domaine Drémont-Marroy, a family business that has been handed down from generation to generation savoir faire and passion for the vine. Fourth generation of vinegrowers and first of winemakers, the first bottle of Champagne with the Drémont brand was marketed in 1955 when the property was still owned by the grandparents and counted only 1ha. It is with Jean-Louis Drémont and Françoise Marroy that, in over 20 years, the Domaine has expanded from 1ha to 7.5ha.
The business is currently run by Mélanie and Jean-Rémie together with their parents Jean-Louis and Françoise. Committed to organic viticulture, the primary objective of this new generation of winemakers is to protect the biodiversity of the terroirs by enhancing their unique character; sustainable agricultural practices are then done, grassing in the center of the row and hoeing under the vines, some plots are also worked with the draft horse (a Boulonnais horse, a breed from northern Picardy at risk of extinction).
The parcel vinification is managed separately and is carried out in wooden barrels (from 200L to 600L) or in particular egg-shaped clay - cement containers, so that each must can reveal its own characteristics and allow to experiment particular blends. During the vinification, minimal interventions are done: the first pressing, "the cuvée", slow cold decantation, is used, the subsequent alcoholic fermentation with the use of indigenous yeasts and the refinement of each parcel takes place separately.
