Vigneron Indépendant located in Passy-sur-Marne, a village in the heart of the Vallée de la Marne, the Lequeux-Mercier family Domaine has been producing Champagne for many generations. The owned vineyard consists of 7 hectares distributed across 25 parcels in Passy-sur-Marne, Barzy-sur-Marne, Château-Thierry and Dormans in which the 3 typical Champagne vines (Pinot Noir, Meunier and Chardonnay) are grown.
80% of the vineyards face south on clay-marly soils and are cultivated rigorously applying the principles of sustainable viticulture. This strong commitment to reducing external interventions to a minimum has the aim of promoting healthy growth of the individual vines in order to preserve the authenticity of its flavors and the specificity of the terroir.
In the cellar, the fermentation process is conducted as long as possible to ensure soft and fine aromas, malolactic fermentation is not done systematically, but depending on the potential of the wine, to preserve the original and authentic freshness of the future Champagne. After the tirage, the refinement on the yeasts takes place in the cool and shaded underground cellars of the Domaine, for a minimum of 4 years and up to 10 for the vintages.
