Les Rendez-Vous N°3 "Meunier"

Les Rendez-vous is a new range of Champagne produced by the Maison Billecart-Salmon, which always experiments aiming at excellence, to offer a unique tasting experience. Defined, original, daring, Les Rendez-vous by Billecart-Salmon was born from the desire to honour an exceptional terroir and an exclusive grape variety combined with the art of winemaking in the most meticulous and demanding way possible.

The Cuvée Les Rendez-Vous N°3 "Meunier" comes from the historic vineyards of the Vallée de la Marne, where the Meunier vine offers the wine a very special identity. Selection of 100% Meunier grapes harvested in the vineyards of Leuvrigny, Damery and Venteuil on calcareous subsoil, vinification 2015 harvest in wooden vats with the addition of 30% of vin de réserve, ageing on its own yeasts for 64 months and final dosage of 2 g/l - making it an Extra Brut. A single grape variety and exceptional terroir for this sensual and elegant Champagne Blanc de Meunier.

The Champagne Les Rendez-Vous N°3 "Meunier" by Billecart-Salmon is bright and radiant to the eye, characterized by a golden hue with subtle silver reflections, always with a perlage of minute bubbles of extreme finesse. On the nose its harmonious floral sensations (linden and violet) is combined with the summer scents of a recently harvested wheat field (cereals and straw). This Cuvée will awaken the senses transporting you in that backlight between crunchy fruit and citrus pulp. A very delicate structure in which Meunier reveals itself with finesse and elegance. On the palate a sensual consistency evolves towards infused and delicious fruit (white cherry, pear and currant). The perfect sensation of an ethereal path marked by a refined organoleptic ability, with a rich finish that tends towards white pepper and pleasant acidulous and saline notes.

Champagne Billecart-Salmon

Everything started with the marriage between Nicolas François Billecart and Elisabeth Salmon, and Maison Billecart Salmon was born in 1818 in Mareuil-sur-Aÿ. The Maison has remained faithful to traditions and the champenoise vinification process: both principles written down by monks and the ones passed on orally, without forgetting the introduction of modern science principles. The production is controlled by the enologist François Domi, extends over a surface of 10 hectares, integrated by grapes from other producers. It produces around one million bottles a year. Two hundreds year later, the 7th generation of Billecart-Salmon manages the maison and keeps the the legend of this Champagne alive. Grapes can count on a philosophy based on three basic principles: fineness, balance and elegance.
