The Champagne Cuvée Louis Salmon by Billecart-Salmon is a tribute to Elisabeth Salmon's brother, an oenology enthusiast who has actively participated in the production of wines since the birth of the Maison. This is the fruit of 100% Chardonnay from 4 Grand Crus of the Côte des Blancs: Avize (Lieu-Dit Les Pierres Vaudon), Chouilly (Lieu-Dit Mont Aigu), Mesnil-sur-Oger (Lieux -Dits Les Coullemets and Chétillon) and Cramant. Vinification occurs for 5% in oak barrels, partial malolactic fermentation and ageing for about 10 years on its own yeasts before disgorging.
This Blanc de Blancs Millésime 2008 expresses the sophisticated elegance of a mineral and extremely precise Chardonnay. Its natural balance harmoniously reflects the characteristics of the best Grand Cru plots of the Côte des Blancs: Cramant and Chouilly for finesse, Avize for intensity and Mesnil-sur-Oger for structure and longevity.
The Champagne Cuvée Louis Salmon by Billecart-Salmon has a pale golden colour with delicate reflections, characterised by yellow and green hues. The effervescence is persistent, charming and luminous. On the nose, the attack expresses impeccable and complex maturity, with aromas of yellow fruits and citrus fruits (candied mandarin, limoncello, pear conference). An aromatic profile of sophisticated purity with a balanced and crystalline chalky character (cedar and raw butter). On the palate, it has a creamy tactile sensation of splendid and precise finesse. Excellent refreshing balance of natural flavours of cedar peel, almond biscuit and white pepper. This powerful, highly typical wine offers a prolonged finish with extraordinary aromatic persistence (sweetened citrus pulp, cardamom and vanilla choux).
Everything started with the marriage between Nicolas François Billecart and Elisabeth Salmon, and Maison Billecart Salmon was born in 1818 in Mareuil-sur-Aÿ. The Maison has remained faithful to traditions and the champenoise vinification process: both principles written down by monks and the ones passed on orally, without forgetting the introduction of modern science principles. The production is controlled by the enologist François Domi, extends over a surface of 10 hectares, integrated by grapes from other producers. It produces around one million bottles a year. Two hundreds year later, the 7th generation of Billecart-Salmon manages the maison and keeps the the legend of this Champagne alive. Grapes can count on a philosophy based on three basic principles: fineness, balance and elegance.
