Les Rendez-Vous CINQ "Pinot Noir"

Les Rendez-vous is a new range of Champagne produced by the Maison Billecart-Salmon, which always experiments aiming at excellence, to offer a unique tasting experience. Defined, original, daring, Les Rendez-vous by Billecart-Salmon was born from the desire to honour an exceptional terroir and an exclusive grape variety combined with the art of winemaking in the most meticulous and demanding way possible.

The Cuvée Les Rendez-Vous CINQ comes from a selection of 5 historic terroirs where the Pinot Noir gives the wine a very special identity. A selection of 100% Pinot Noir grapes harvested in the vineyards of Verzenay, Ambonnay, Aÿ , Mareuil-sur-Aÿ and Verzy . Harvest 2015 (72%) with 28% vin de réserve, vinification and fermentation in stainless steel tanks, ageing on its lees for around 60 months and final dosage of 1 g/l - making it an Extra Brut. A single grape variety and an exceptional terroir for this creamy and rich Champagne Blanc de Noirs.

The Champagne Les Rendez-Vous CINQ by Billecart-Salmon presents itself with a golden yellow hue and vivid, sparkling, patinated reflections. The bubbles are very fine, dynamic and streamlined. On the nose it has a certain aromatic freedom with infused floral sensations (linden blossom and verbena) that intertwine with a refinement of fresh, crisp fruit (tangerine and berries). It will awaken your senses with pure nuances ranging from pulpy fruit to citrus peel. A very delicate blend in which the expression of Pinot Noir is subtly revealed through the DNA of its terroir. The palate is remarkably full-bodied, with an elegant interpretation of creamy fruit (limoncello, crushed almonds and light tobacco). The perfect sensation of an accomplished pleasure index that defines a medium palate tending towards a deep and controlled distinction (stone fruit, cherry, blueberry, apricot flesh and fresh figs).

Champagne Billecart-Salmon

Everything started with the marriage between Nicolas François Billecart and Elisabeth Salmon, and Maison Billecart Salmon was born in 1818 in Mareuil-sur-Aÿ. The Maison has remained faithful to traditions and the champenoise vinification process: both principles written down by monks and the ones passed on orally, without forgetting the introduction of modern science principles. The production is controlled by the enologist François Domi, extends over a surface of 10 hectares, integrated by grapes from other producers. It produces around one million bottles a year. Two hundreds year later, the 7th generation of Billecart-Salmon manages the maison and keeps the the legend of this Champagne alive. Grapes can count on a philosophy based on three basic principles: fineness, balance and elegance.
