Champagne Fosse-Grely by Ruppert-Leroy is a captivating and vibrant cuvée, the result of a perfect balance between Pinot Noir and Chardonnay in equal parts. The grapes come from the namesake parcel “Fosse-Grely”, located at the foot of the Essoyes hillside, in the southern area of Champagne, the Côte des Bar. The name itself tells the story of the terroir: “Fosse” refers to a natural hollow, while “Grely” is an old local term for gravel, both elements contributing to the wine’s mineral and dynamic personality.
Cultivated according to the principles of certified biodynamic viticulture, the vineyards are managed with an approach that is as respectful of nature as possible. In the cellar, Bénédicte and Emmanuel Leroy follow a winemaking philosophy without compromise: no fining, no filtration, use of indigenous yeasts, zero added sulfites, and no final dosage. Based on the 2022 harvest, fermentation and aging take place in 225-liter barriques and 500-liter demi-muids for about 9 months, followed by an additional 18 months of aging on the lees in bottle. Disgorgement is carried out manually à la volée, preserving the full vitality and expressiveness of the wine.
On tasting, Fosse-Grely reveals an elegant and multi-layered aromatic profile: white flowers, pear, vine peach, and subtle citrus hints open to a fresh, silky, and remarkably clean palate. The sip flows fluidly and precisely, driven by mineral tension that reflects the purity of the fruit and the authentic voice of the place.
This cuvée embodies the philosophy of Ruppert-Leroy: an artisanal Champagne, born from a single vineyard and a single vintage, a genuine expression of a terroir told with transparency, energy, and profound respect for nature.
The Domaine Ruppert-Leroy is located in Essoyes, in the heart of the Côte des Bar, one of the emerging areas of Champagne. Founded in 1998 by Emmanuel Ruppert and Bénédicte Leroy, the Domaine is now a reference point for those seeking authentic Champagne. Its approach is based on practices of natural and biodynamic viticulture, certified since 2014. The vines are planted on clay and limestone soils, which give the wines a unique minerality. The Domaine cultivates small parcels in different areas of the Côte des Bar, showcasing the potential of varieties such as Pinot Noirand Chardonnay.
The work in the vineyard is crucial for the quality of the cuvées from Ruppert-Leroy. The approach is completely respectful of the terroir and free from intensive or chemical agricultural practices. The agricultural management integrates compost production, animal husbandry, and the use of biodynamic preparations. This self-sufficient agricultural ecosystem is the foundation for producing wines that faithfully reflect the terroir. Each individual parcel is treated with the utmost care to preserve biodiversity and the natural balance of the soil, allowing the plants to fully express their potential.
In the cellar, the approach is artisanal and minimalist. Spontaneous fermentation occurs with indigenous yeasts, with no addition of commercial yeasts, clarification, or filtration. The wines are aged in wooden barrels, including 225-liter barriques and 500-liter demi-muids, to ensure complexity and finesse. Each cuvée follows the Brut Nature philosophy, with no addition of sulfites or liqueur de tirage, allowing the wine to remain pure and transparent. The result is Champagne appreciated for its freshness, elegance, and the ability to reflect the authenticity of the terroir.
