Blanc de Blancs
The Champagne Blanc de Blancs by Veuve Fourny & Fils is a refined expression of pure Chardonnay grapes combining power and minerality. Obtained from grapes harvested in the Premier Cru vineyards of Vertus and other selected areas, cultivated on chalky soils, this Champagne reflects the mastery of Maison Veuve Fourny, combining purity, finesse and elegance.
The vines, with an average age of 40 years, yield fruit of extraordinary quality, used exclusively for the first pressing juice (cuvée). Vinification occurs 75% in steel tanks and 25% in oak barrels, with 7 months ageing on the lees before bottling. A blend of three consecutive vintages, with 20% vin de réserve, contributes to the complexity and consistency of taste. After draught, the Champagne matures for a long time on the lees in the Maison's historic cellars, at a constant temperature, to ensure superior quality. With a dosage of only 5 g/l - making it an Extra Brut - this Blanc de Blancs offers a perfect balance between creaminess and freshness, culminating in a saline finish.
