Champagne Vadin-Plateau

Rosé Symbiose

The Champagne Rosé Symbiose by Vadin-Plateau represents the successful alliance between the tradition of the classic Champagne blend (Chardonnay-Pinot Noir-Meunier) and a remarkable red wine, Cumières Rouge: a rare wine made only from Meunier grapes. The grapes harvested for this Champagne Rosé come only from vineyards - 2020 harvest base - located in three villages classified as Premiers Crus: Hautvilliers, Cumières and Champillon. Fermentation with its own yeasts without malolactic fermentation, over four years on its own yeasts and a final dosage of just 2 g/l - making it an Extra Brut.

The Champagne Rosé Symbiose by Vadin-Plateau has a brilliant pink colour with delicate, fine bubbles. The nose is bewitching with fresh notes of raspberries, wild strawberries and sweet fruit. Crisp, lively and refreshing on the palate with a hint of cherry. It goes particularly well with white meat, poultry or fish.

Vadin-Plateau

Vadin-Plateau is a small family Maison located in Cumières, classified as Premier Cru, in the heart of Vallèe de la Marne. The property of Vadin-Plateau extends for 7 hectares over seven villages, both classified as Premiers and Grands Crus, accurately selected by the family for their features: Aÿ, Pourcy, Hautvillers, Cumières, Damery, Venteuil, Château-Thierry.

Since 1785 the passion for the wine and the vine cultivation has been passed from generation to generation and is still ongoing with Yann (9th generation). All parcels are exclusively located on south and south-east facing slopes and composed by 44% Meunier, 39% Pinot Noir and 17% Chardonnay. Since 2012, Yann has embraced a biological and biodynamic viticulture, obtaining a certification in 2017.

Upon harvesting, grapes have an exceptional concentration and excellent aromatic features, and are later vinified to create small productions with low final dosage. Since 2011, the cave has added oval clay containers, opening new fermentation possibilities. This knowledge allows the Maison to express its own terroir through "traditionally" unique Champagnes.
