Champagne Sacy Soeur & Frère
Le Trou d'Enfer "Face Sud" Magnum
The Champagne Le Trou d’Enfer “Face Sud” by Sacy Sœur & Frère brings into the bottle the fresh and direct vision of Yaël and Jonathan Sacy, siblings who reinterpret the terroirs of their historic family estate in their own way, guided by organic viticulture and by a simple yet deep conviction that living soils make living wines. The wine takes its name from the namesake plot (lieu-dit) from Cernay-lès-Reims, on the northern slope of the Montagne de Reims, and tells in particular the story of its south-facing portion, where greater exposure to light supports fuller ripening of the grapes without sacrificing the tension typical of this corner of Champagne. A single-plot Blanc de Noirs that makes territorial transparency its stylistic signature.
This edition, 2023 harvest, is made from Pinot Noir and Meunier grapes in equal parts and undergoes spontaneous vinification and fermentation in small stainless steel tanks, a choice that leaves indigenous yeasts the task of faithfully translating the character of the plot. After tirage under cork, the wine ages on the lees for over 24 months, while the absence of final dosage, in Brut Nature style, delivers an intact and unfiltered expression of fruit and soil.
On tasting, Le Trou d’Enfer “Face Sud” shows a pale gold colour with slightly coppery highlights and a fine, creamy perlage. The nose opens with notes of red apple, ripe pear and small red berries, joined by hints of citrus, dried flowers and a touch of light pastry, with chalky and saline nuances emerging towards the finish. On the palate the attack is frank and vibrant, with juicy substance well supported by freshness that unfolds naturally, finding its balance in mineral tension and leading to a long, dry and savoury close of remarkable precision and persistence.
