Cordon Bleu
The Champagne Cordon Bleu by De Venoge is the Maison's signature cuvée since 1851, whose famous blue band on the label evokes the Venoge river in the Swiss Canton of Vaud, the watercourse from which the family itself took its surname and which over time has become its most recognisable emblem. Cordon Bleu was born with a clear stylistic imprint built on Pinot Noir, a variety that grants it roundness and a distinctive vinosity, establishing itself over the decades as the true backbone of the Maison's very identity.
It is the Maison's Brut Sans Année, born from an almost equal blend of the three Champagne grape varieties, with Pinot Noir, Chardonnay and Meunier grapes in nearly equivalent proportions, enriched by 25% vin de réserve that brings depth, roundness and stylistic continuity. After tirage, it rests on its own lees for a minimum period of 36 months before dégorgement, with a final dosage of 6 g/l, in Brut style, that completes the profile while preserving balance and harmony.
On tasting, Cordon Bleu Brut stands out for its balanced, rounded structure, sustained by a measured freshness that sets its rhythm and balances the underlying softness. The texture is fine and harmonious, capable of combining fullness and finesse in a cohesive, pleasantly complex whole. On the palate it develops with smoothness and elegance, closing on a relaxed persistence in which roundness and vivacity coexist with continuity and refinement.
