Champagne André Clouet
Chalky
The Champagne Chalky by André Clouet is an elegant Blanc de Blancs made exclusively from Chardonnay grapes. One third of the grapes come from the southern slopes of the Montagne de Reims and the remaining two thirds from Côte des Blancs, famous for the quality of their chalky soils. After pressing, the must ferments in small stainless steel containers, followed by a minimum ageing period of 36 months on its lees. The remuage is done manually, while the final dosage, less than 4 g/l, makes this Champagne Blanc de Blancs refined and territorial.
The ‘total white’ packaging, specially designed for Chalky, celebrates the distinctive element of this terroir: chalk. The history of chalk in the Champagne region dates back over 200 million years, to the Jurassic era, when the region was covered by the sea. Although poor in nutrients, chalk is able to retain and release heat and water gradually, providing the vines with an ideal environment for perfect ripening. Thanks to its ability to drain excess water and retain water enriched with microscopic marine fossils, chalk nourishes the vines, giving them a unique minerality and salinity.
In addition, chalk protects Champagne during ageing, making it possible to build deep underground cellars where the precious nectar can mature away from light and temperature fluctuations.
