L’Âme de 2012

Champagne L'âme de 2012 by Bertrand-Delespierre is the blending in equal parts of the three typical grape varieties of Champagne, Pinot Noir, Chardonnay and Meunier, from vineyards of different crus owned by the Domaine: Chamery, Ecueil and Villedommange, Premier Crus in the Montagne de Reims.
Millésime 2012, this Champagne obtained exclusively from the juices of the first pressing, vinified in steel tanks and does not carry out malolactic fermentation. The nose features long aging of at least eight years on its own yeasts before dégorgement and a dosage of 2 g/l (Extra Brut).
The nose presents notes of citrus and crunchy apples supported by notes of leavened dough and honey, as well as floral notes and a subtle mineral-spicy hint. The palate is firm but balanced, fresh and crunchy, with good persistence.
