Cuvée Mètonymie

Champagne Mètonymie by Pascal Lejeune is made from 53,75% Meunier, 33,75% Chardonnay and 12,50% Pinot Noir from old vines of 30 years old from Vinay, Moussy and Epernay, a village in the Vallée de la Marne

Harvest 2018, this Champagne vinifies mainly in stainless steel tanks with a short passage in oak barrels. No malolactic fermentation and no cooling process. It remains on the lees for 3 years; final dosage 6 g/l (Extra Brut).

Complex and deep, Champagne Mètonymie offers hints of brioches, ripe fruit and toast. The delicate floral aroma balances all its characteristics. Excellent as an aperitif or to pair with salads, white meats and fresh cheeses.

Champagne Pascal Lejeune

The origins of Domaine Pascal Lejeune date back to the beginning of the 19th century, when Edmond, the great-grandfather of Sandrine, the fourth generation and current owner, cultivated a few hectares of vines in Moussy, on the southern slopes of Epernay; although, at that time, vines were not yet important and the entire production was sold to the local cooperative. Since then, the management of the Domaine has passed from hand to hand in the family until, in the mid-1950s, they began selling Champagne under their own brand name.

Pascal and Sandrine have been sharing the management of the Domaine since 1995 under the impetus of strong growth: the vineyard is extended to 4.40 hectares, the "Champagne Pascal Lejeune" brand is created and new vintages are added to the range. Sustainable viticulture was also introduced and became Pascal's credo. Since 2015, his son Thibaut has also joined the business, sharing with his father the same passion for viticulture and bringing a fresh vision to this family adventure.

Committed to the preservation of the land, Pascal Lejeune has for many years now followed a reasoned and responsible approach to viticulture by associating the principles of organic farming with biodynamic practices, with particular attention to the maintenance of biodiversity and with significant consequent relative reduction in the use of plant protection products. For two years, the company has been in organic conversion and since 2016, all its Champagnes have been certified "Viticulture durable en Champagne" and "Haute Valeur Environnementale".
