Champagne Dom PĂ©rignon

Dom PĂ©rignon is driven by a creative ambition, the ceaseless pursuit of a harmony that becomes a source of emotion. Every creative process has its constraints, and for Dom PĂ©rignon that constraint is the vintage, an absolute commitment to bear witness to the harvest of one single year, whatever the challenge, going so far as to forgo declaring the Vintage if necessary. Time is essential to the Dom PĂ©rignon equation, and at least eight years of elaboration are needed to reach the aesthetic ideal of the Maison. In the darkness of the cellars, within the bottles, the wine undergoes an active transformation in contact with the lees, attaining the harmony that is the hallmark of the house. It is there that everything happens, with great precision, on the edge of an extraordinary balance.
This edition, Vintage 2012, bears the mark of a year full of paradoxes, one that put the vines to a severe test with spring frosts, torrential rains and heatwaves, before a warm and dry climate restored perfectly healthy, ripe grapes harvested between 10 and 26 September. The blend brings together in almost equal parts Pinot Noir and Chardonnay grapes, and after bottling the wine undergoes a long maturation of at least seven years on the lees, while the final dosage of 5 g/l, in a Brut style, rounds out its profile.
On tasting, Dom PĂ©rignon Vintage 2012 reveals a rich and multifaceted nose that weaves white flowers and sweet apricot with a powdery touch, before turning towards the freshness of rhubarb and mint and the smoky minerality of ash, closed by a hint of white pepper. On the palate energy prevails, with a soft opening that quickly turns vibrant before exploding into a tonic effervescence, while the finish converges on acidic and bitter notes of penetrating tension, among ginger, tobacco and toasted aromas.
